Mango Chicken

Marinade

1 cup cubed Mango

3 tbsp Lime juice

2 tbsp Oil

1 tbsp Oyster sauce (or fish sauce)

I tbsp Brown sugar

1 Tbsp Chilli sauce

3 cloves Garlic – chopped

1/2 tsp Salt

Blend together

Marinade the chicken for at least 4 hours.

Grill (using a spoon of the marinade on top)

Sauce

Add 1/4 cup of water to the remaining marinade and bring to the boil, simmer for 5 mins.

Serve with chopped coriander and the sauce.
