Rhubarb Oat Slices

Rhubarb

250g Rhubarb – cut into 1cm pieces

1 tablespoon Soft Brown sugar

Mix together with 1 tablespoon of the flour

Batter

100g Plain flour

1 tables Baking powder

Pinch Salt

Mix together

125g Butter

100g Caster sugar

2 Eggs

I tsp Vanilla essence

Beat together then add the flour

Crumble Mix

 

75g Butter

 

75g Plain flour

 

125g Soft brown sugar

 

50g Chopped Walnuts

 

50g Oats

Fork together into big crumbs

Pour the batter into a lined and greased 8″ square baking tin 

Add half the Crumble topping

Add the rhubard

Ad the remaining Crumble topping

Bake for 45 minutes at 190 C
