60g caster sugar – whisk into the egg white

30g plain flour – sift in to the mix

1/2 tsp vanilla essence

plus

30g melted butter – whisk in

Spoons into rounds on a silicon mat on a baking tray

Cook for 9-10 minutes at 180 C

Shape over a wooden spoon while warm
