Chilli Jam

500g (very ripe) tomatoes – diced

Blend half the tomatoes with:

4 cloves garlic

4 large red chillies

6-7cm ginger

Add:

300g Golden Caster Sugar

2 tbsp Oyster Sauce (or fish sauce)

100ml Red wine vinegar

and bring to the boil.

Reduce to a simmer.Add the remaining tomatoes and simmer for 30-40 minutes.

Put into sterilised jars while still warm.
