Lancashire Lemon Fingers

6 oz Self Raising flour

6 oz Caster sugar

6 oz Butter

2 Eggs

Rind of 1 Lemon

Beat together to form a batter.

Put into a 12×8″ greased, lined baking tin and bake for 15mins at 180 C

Juice of 1 Lemon

4 oz Granulated sugar

Mix an spread over the warm cake

Cool in the tin
